Supra (Georgian Feast)

又名:სუფრა

Georgia's ritualized feast — hours of food, wine, and toasts led by a tamada.

A supra is not a dinner — it is a choreographed feast that can last four hours and involves specific toasts in a specific order, led by a tamada (toastmaster) whose job is to guide the emotional arc of the evening. Every Georgian celebration — weddings, funerals, birthdays, hosting foreign guests — is structured as a supra.

历史与传统

The tradition goes back at least to the 12th century and is deeply Christian in its symbolism, but with pre-Christian roots. UNESCO added Georgian polyphonic singing (which fills a supra between toasts) to its Intangible Cultural Heritage list in 2001. The supra is inseparable from Georgian identity — refusing to attend a supra offered by a host is a serious insult.

正宗吃法(格鲁吉亚人怎么吃)

The table is covered with cold dishes when you arrive (khachapuri, pkhali, salads, cheeses) — hot dishes arrive throughout. Don't eat before the first toast. When the tamada raises a glass, everyone drinks. Toasts follow an order: to peace, to family, to those who are no longer with us, to guests, to Georgia, to love. Between toasts, drink water or wine — never toast without the tamada's permission.

哪里能吃到最正宗的

  • Any Kakheti wine-tour supra — the standard tourist introduction, still authentic
  • Village guesthouse in Svaneti, Tusheti, Racha — real family supras
  • Ethnographic Museum Open Air (Tbilisi) — organized supras with polyphonic choir
  • Any Georgian wedding — if invited, go, and don't leave early
  • Do NOT judge Georgian supras by a fancy Tbilisi restaurant version — those are staged

常见问题

How long does a supra last?

3–5 hours minimum. A wedding supra can last 8+ hours. Pace yourself with food and wine — this is a marathon.

Do I have to drink at a supra?

You should participate in toasts by raising your glass and taking at least a sip. It's polite to explain if you don't drink alcohol — the tamada will usually toast with lemonade for you.

What is a tamada?

The toastmaster — the person who runs the supra by proposing toasts in the traditional order. Being asked to be tamada is an honor and a responsibility.

Can I toast at a supra?

Only if the tamada gives you permission ('alaverdi'). Interrupting the toast order is rude. When invited, keep it short, sincere, and thematically appropriate.
